Spumoni comes from the Italian word spuma, which means foam and references its light texture. Spumoni is traditionally made from a gelato base with whipped cream and, once it's nice and fluffy, the maker typically adds in all manner of additions, which traditionally includes fruits, nuts, and chocolate bits. The mix is then layered into molds and chilled. Once properly cold, the spumoni is then cut and served like slices of layered cake. Spumoni is said to have originated in Naples, Italy. It then made it across the Atlantic when Italian immigrants brought their spumoni recipes to the United States in the early 20th century. It's said that the original spumoni recipe comes from Salvatorre Lezza who brought the family recipe to the west side of Chicago. Today, when shopping in the grocery store, you'll most likely see spumoni labeled as ice cream but you can order from the Lezza company if you wish to get something with real authenticity. With over a hundred years under their belt, this family has preserved its way of creating what many deem to be the perfect pint of spumoni. However, as with so many culinary traditions that found their way to the U.S., spumoni was Americanized, this time transforming into another popular frozen dessert: Neapolitan ice cream.

Spumoni comes from the Italian word “spuma,” which means “foam,” which gives plenty of clues to the richness of flavor of this traditional Italian dessert that has been loved since the late 19th century. It’s a molded three-layer dessert that's frozen for a few hours and served in slices. Each layer blends gelato with whipped cream, and the flavors are typically pistachio, cherry, and chocolate gelato. The extra ingredients that are mixed into each layer of gelato are what keep most people coming back for another slice. Candied fruits, nuts, and chocolate chips are speckled throughout the dessert, adding texture and a gourmet flavor. Traditionally, it’s created from pistachio, cherry, and chocolate gelato flavors. Although now you can also find the chocolate swapped for vanilla or almond gelato, paying tribute to the green, red and white colors of the Italian flag. Spumoni and ice cream are both ideal summertime sweets hailing from Italy, but they’re definitely not the same. The main star of Spumoni is gelato. Gelato usually doesn’t contain eggs and uses generous amounts of milk, much more than ice cream. In comparison, ice cream is heavy on cream and eggs, which increases its calories and fat content. The cream in spumoni is whipped into the finished gelato to give this dessert an irresistible fluffiness.

El spumone es un gelato italiano hecho en molde y compuesto por capas de diferentes colores y sabores. Tiene típicamente tres sabores, con una capa de fruta o nuez entre ellos. El chocolate y el pistacho son los sabores típicos de las capas de helado, y la capa de fruta o nuez contiene a menudo trocitos de cereza, lo que genera la tradicional combinación de rojo o rosa, marrón y verde combinados con pistache, chocolate y cereza. Es el típico helado de la tradición del Salento, difundido también en otras zonas del Sur de Italia y de Sicilia. Sin embargo, parece que el plato procede de Nápoles, bajo el nombre de cassata napoletana, y el helado napolitano de tres sabores evolucionó a partir de él. Spumoni is neither a variation of Neapolitan ice cream, nor is it just another flavor of gelato. It's a unique dish that uses base of gelato, but with other ingredients mixed in and a very specific assembly process that sets it apart. Spumoni gets its name from the Italian word "spuma," which means foam. Befitting of its moniker, spumoni is made by whisking whipped cream into three different flavors of gelato until the rich mixture froths up and turns into a light and airy cloud. The classic flavors are  pistachio, cherry, and either chocolate or vanilla. The latter is used to imitate the colors of the red, white, and green Italian flag. Once the gelato base is nice and fluffy, chunky mix-ins such as candied fruit, amaretto cookies, nuts, and chocolate pieces are folded in. The three gelatos are layered in a mold and frozen, after which the spumoni is sliced into rectangular slabs. Spumoni can be traced back to the late 19th and early 20th century. The concept of layering foods for visual effect was all the rage in Italy at the time, and it didn't take long for the trend to spill over into frozen treats. Spumoni is Neapolitan ice cream's ancestor.
