The affogato is so simple it almost defies innovation, but that’s exactly why I can’t leave it alone. And when you start thinking of it as a format rather than a recipe, your choices burst wide open. How about a pour of lemon-and-clove-spiked Scotch hot toddy? Or mulled cider over a scoop of butter pecan? Or, the most versatile and, to my mind, delicious—a pour of some tea. People who say you should never drink green tea with milk: Try it with ice cream and think about your choices again. Tea’s certainly less potent than espresso, so a tea affogato is certainly more subtle. But what it lacks in punch it makes up in complexity. Grassy green tea turns mellow with an almost honey-like sweetness, especially with vanilla; malty black tea becomes rich and rounded (I like adding a little lemon zest for good measure). You could even use matcha—which one could call the espresso of the tea world—for a nice green color contrast.

Affogato is probably one of the most simple desserts. Traditionally, it is a scoop or two of cold ice cream served with hot espresso poured over it. The Italian word affogato means drowned. So, essentially ice cream drowns in espresso in this popular treat. It’s the perfect mix of hot and cold and the simplicity makes it even more appealing. For a twist on this classic Italian dessert, tea can be used instead of espresso. Similar to the original version, hot tea can offer a unique flavour and balance to the sweet and creamy gelato. Tea affogato can be consumed the same way as the espresso version. Using a spoon, eat the ice cream and then drink the remaining tea with the melted ice cream. The tea should still be fairly hot when pouring on the ice cream. Make sure the ice cream is very cold or else it will melt immediately when the 2 ingredients are combined. For more texture, add toppings. Some ideas include: crushed cookies, sprinkles, citrus zest, shaved chocolate, nuts and/or fruit. There are no toppings on a traditional affogato, but since this is a tea version you can do whatever you like. The serving bowl/glass should be small so that the ice cream properly drowns in the tea.
