These Champagne and Raspberry Ice Cream Floats are a sweet and fun way to toast the New Year.
Part dessert, part cocktail and 100% delicious.
I don’t know what gave me the idea to add ice cream to champagne, but I’m sure glad I did.
It’s an adult ice cream float made classy with champagne of course.
The homemade raspberry sauce, which is ridiculously easy to make, not only adds a beautiful pop of dark red color to the all white floats, but also the most delicious sweet raspberry flavor.
Think of these like dessert mimosas.
Heck you could even make them to go with New Year’s Day brunch the next morning if you need a little pick me up after a night of partying.

Yet the overall decadence of the drink remains the same.
The Connaught Bar’s Velvet Champagne Cocktail combines the eau-de-vie, liqueur, sugar syrup, lemon juice, and puree in a cocktail shaker filled with ice and shake vigorously until the drink is sufficiently chilled.
Strain into a copper-plated Moscow Mule mug filled with a piece of block ice.
